Ranking and being readable are not the same problem.
A site can rank perfectly well and still be nearly useless to an assistant. Search engines have spent twenty years learning to infer meaning from messy pages. Assistants do not infer — they read what is legible, and when a business is not legible they reach for whatever is: a directory, an aggregator, a competitor who published their hours as data.
That is why a business with good rankings can be entirely absent from the answer a customer actually receives. The work that fixes it is unglamorous and mostly invisible to humans, which is exactly why so few sites have done it.
